I was born in Prato Carnico many years ago, before I make the landlord turned a bit 'over the world.
I understand that one of the important features of our cuisine of Friuli is the ability to combine culinary traditions peasant and aristocratic, succeeding in this way to produce unique and delicious dishes.
This fusion is also a dish that is a specialty of our Tavern: agnolotti Carnian, or those Cjalzòns Cjarsons.
The Cjarsons were once the dish of family celebrations, feasts and festivals of the country, a little 'throughout the meat.
Consider that, in fact, it is said that there is no specific recipe of Cjalzòns, but every family in every country of the flesh has its own particular.
This particular agnolotti, whose filling contains meat, eggs and spinach and is flavored with parsley, herbs and, depending on the situations, places and time Carnia with smoked ricotta, candied citron, raisins and chocolate ( but do not tell them how we do ... is a little secret!)
Served with seasoned butter, combined with smoked ricotta cheese and seasoned carnico.
The perfect wine, to match this dish is, I think, a good Refosco, or a good Schioppettino for the entire month of September you can find our inn, offered at a special price!
September, the month of festivals, celebrations of the country, is also the month that faces towards the autumn, where, with the first cool nights, back to the desire of dishes like this, a bit 'stronger and giving the office for the great divide after the summer recess.
